Finally Fall

It's finally starting to feel a bit like Fall around here, and I'm so excited about it. I always get a little frustrated when it's October and it's still 90 degrees. I'll take these cooler temperatures anytime.

I made a great soup for dinner the other night. It was modified from a recipe I found at Sarah's In the Midst of It.

Souper Chicken Spaghetti

1 prepared rotisserie chicken
1/2 c. each chopped onion, green pepper, celery, carrot
2 cloves garlic, minced
4 c. chicken broth
2 14 oz. cans diced tomatoes, undrained
1 jar spaghetti sauce (I used Newman's Own Marinara)
1/2 tsp. dried Italian seasoning
1/2 tsp. salt or 1/4 tsp. coarse Kosher salt
1/4 tsp. black pepper
dash crushed red pepper
2 oz. dried spaghetti, broken into 2-in. pieces

Cook all veggies over medium-high heat til they are tender.
Add rest of ingredients and bring to boil. Then reduce heat to boil very gently, uncovered, about 12-15 minutes or til pasta is tender.

It would have been great served with some French bread, but I didn't have any so Brian ate his with a toasted hamburger bun. We're all about improvising around here.

It makes a ton of soup so be prepared to have leftovers unless you're feeding a big house full of people.

Baby S must like the cooler weather too, because I'm finally feeling kicks and squirms almost every day. Last Thursdsay night I was positive I'd felt the baby for the first time. And now that I know it's really the baby I notice it a few times a day. It's really pretty cool.
